Brunost is a brown cheese from caramelized whey made from goat or cow’s milk. It’s more popular variety is called Gudbrandsdalsost, a mixture of cow and goat milk, cream and whey.

Serving Suggestions:

If you have a cheese slicer, you may use it to give you think slices of the cheese. Brunost is mostly eaten on sandwiches, crisp bread, biscuits or Norwegian waffles. To me, this tastes like pastillas cheese and I would have it on a Fita cracker to compliment the sweet and salty flavor profiles.
